Pro tip: stop shaking the basket mid cook, my fries come out better when I just leave them alone
Everyone on here says you have to pull the basket out and shake everything halfway through, and I did that for almost a year with frozen fries and they always came out uneven and kind of pale. About 3 months ago I got lazy and just set the timer for 18 minutes at 400 and walked away, and the fries came out way crispier with a better outside. I think every time you pull that basket out, you dump all the hot air and the temp drops, so you're basically starting over twice. Now I only shake if I'm doing something big like wings or brussels sprouts, and even then just once near the end. I tested it side by side on a Sunday, same bag of fries, one shaken at 9 minutes and one not, and the unshaken batch won easy. My wife still thinks I'm wrong but she ate the whole bowl without saying anything, which says enough. Am I the only one who thinks the shake advice is overrated, or did someone else figure this out the lazy way too?
My buddy Dave on the east side did the exact same test last month with a bag of Ore-Ida crinkle cuts. Shook his at 8 minutes, left the other batch alone at 400 for 20. Said the unshaken ones had way better color and crunch, and his kids actually finished them instead of leaving half in the bowl. Now he just leaves the basket alone and pulls it once at the very end to dump them out.
