Mortar mix choice on my 3,000 brick job: pre-bagged or site mixed?

Took a job last spring in Grand Rapids laying 3,000 brick for a garage and had to pick between pre-bagged type S mortar or mixing my own from bags of sand and cement at the site. I went with site mixing to save money, ended up with two batches that were too wet and had to chip out about 40 bricks the next morning. Anyone here run pre-bagged on big jobs, and did it actually slow you down or was the consistency worth it?
