Spent a whole year boiling my rice wrong until my Thai neighbor peeked over my fence
I was making rice every night for dinner and it always came out either mushy or crunchy. Last week my neighbor from Thailand saw me rinsing it under the tap and just started laughing. She showed me I was supposed to soak it for 30 minutes first and then use way less water than I thought. $2 bag of jasmine rice suddenly tastes like restaurant quality. Anyone else have a cooking basic they got totally backwards for way too long?

Soaking is key, how long do you actually soak yours?

Wait, how long is too long though?
I left mine in water overnight once. Total accident. Fell asleep watching a movie. Woke up the next day and thought for sure I ruined them. They were actually fine. Kinda mushy on the outside but still worked. Not my best batch ever but not a disaster either.
I usually do around 12 hours now. Sometimes less if I'm in a hurry. My buddy swears by 24 hours minimum. Tried that once. They started smelling weird. Never again.
Guess it depends on what you're making with them. That's what I've noticed anyway.
