My sous chef bet me $50 that resting steaks on a wire rack beats a plate, and I hate that he was right
I told him it was nonsense and that a plate works fine, but he set up a side by side test with two ribeyes from the same block at our spot on 5th Street. The rack one had a way better crust and didn't sit in its own juice, and now I've got three racks in the walk-in. He's never letting me hear the end of that 50 bucks. Anybody else have a cook prove them wrong in a way you can't argue with?
