Serious question, I thought the 'no burp' method for sauerkraut was a joke

You say "that initial gas build-up is like a safety seal" but does that really hold true long term? I ask because I had a jar of pickled jalapenos that got that pressurized seal, and after about 3 weeks it still sounded tight when I opened it. But then I opened another batch that did the same thing and it had zero fizz, like all the CO2 had just dissolved back into the brine or something. So are you getting that seal and it's actually preventing spoilage, or is it just giving you a false sense of security while the fermentation slows down way faster? I'd love to know what specific veggies or brine ratios you're using to keep that gas working as a seal.

I finally figured out what went wrong with my croissants after 8 tries

Yeah that's the thing about stuff like this, you don't just learn the recipe you learn the rhythm of it. It's like when I finally realized I was overwatering my houseplants for months because I thought they needed constant moisture but actually they just needed to dry out completely between waterings. We get so focused on the big steps that we completely forget the tiny pauses in between are the whole point. It's wild how much of life is like that, you know? Like the rest is the actual work.

Switched to a shared project doc for all updates. We both add notes there so nothing gets lost in an inbox. It's basically a living to-do list and log, and it stopped the "did you see my email" problem cold.
