Dropped $140 on a proofing box and it saved my holiday orders
Two Decembers ago I was losing dough batches overnight because my kitchen sits at 62 degrees and my starter just stalled out, so I paid $140 for a small proofing box with a heat setting. That box kept every batch moving at the same pace through a rush of 60 rolls a day, and I still use it for every bake. Did I overpay for what is basically a warm plastic tub, or do you all get by with an oven and a towel?
