My friend's sourdough pancaked last July, total humidity casualty.

My grandma's bread recipe always used the same yeast amount, no matter the weather. I stuck to that for years, thinking humidity didn't matter much. Then one humid day in July, my dough overproofed and collapsed. Hearing @viola_stone65's story about her friend's sourdough made me realize it's common. Now I drop the yeast by about a third when the air feels thick, and my loaves hold shape. It's a small change, but it saves so much frustration.
