Took me 4 years to try a sourdough starter, wish I did it sooner

I always thought sourdough starters were too much maintenance for a home baker like me. Finally started one back in March and after 2 weeks of feeding it, my first loaf came out with a better crust than anything I made with commercial yeast. Anybody else put off trying something only to find out it was easier than you thought?

Yeah for sure. It took me forever to try making my own pizza dough from scratch. I just bought the pre-made stuff for years thinking it would be way too complicated and messy. Finally did it one weekend during lockdown and it was honestly not that bad. A little trial and error with the kneading time but after a few tries I got a nice chewy crust that blows the store bought stuff away. Now I won't even bother with the pre-made stuff unless I'm really in a rush. Sometimes you just gotta jump in and see what happens.

Man honestly @jakegarcia I gotta push back a little. Like yeah homemade dough is good but is it really that big of a deal? I've had both and the difference is not some life changing thing. A good store bought crust with some better toppings and maybe a little oil on the edges is like 90% of the way there. And honestly I've been to pizzerias that charge like 30 bucks for a pie and it's dry cardboard. Meanwhile I've had frozen pizza from Aldi that hit the spot. Sometimes the effort isn't worth the small improvement.
