Vent: sourdough starter took 23 days to actually work, not 7 like every recipe says
Every blog and book I read said 5 to 7 days and you'd have a bubbly starter ready to bake. I fed mine daily, kept it warm, used filtered water, did everything by the book. Day 8 it looked active, so I tried a loaf. Brick. Day 12, tried again. Another brick. Almost gave up and tossed the whole jar. Then on day 23, out of nowhere, it doubled in 6 hours and my bread finally had an open crumb. Turns out my tap water had chlorine that was killing the yeast slowly. Had to switch to bottled water. Anyone else have a starter that took way longer than the internet promised? How many days did yours take?
