I was baking a cheesecake for my dad's birthday at my apartment in Boise and about 25 minutes in, smoke started pouring out of the oven. The water bath had soaked through the foil and the butter from the crust ran down onto the heating element, so I yanked the pan out, slid a sheet tray under it, and finished the bake with the oven cracked open for the rest of the 70 minutes. Do you guys double wrap with the foil or just skip the water bath and put a tray of water on the rack below?
