Oh man, I felt the exact same way. It just seemed like a shortcut that would ruin the bark. But if the pros in Texas are doing it, I guess it's legit.

Right, the "shortcut that would ruin the bark" is exactly what I worried about. But @kelly.keith, what are these Texas pros actually doing that's different? Are they wrapping it in paper first, or just throwing a full brisket in foil with some liquid? Because just steaming it seems like it would make the bark soggy, doesn't it? I need to know the step-by-step before I trust it.
