Mortar color changes after it cures, here is what I found on a 60 foot wall

Tried matching a patch to existing brickwork with the same mix ratio but the color came out lighter after drying, so I started testing small samples on scrap board for 4 days before committing, has anyone else dealt with pigment ratios shifting that much?
