Update: I stopped buying canned beans and started cooking them from dry after my friend in Phoenix said it was a waste of money.

I know everyone says it's too much work, but soaking a pound of black beans overnight and cooking them in my slow cooker while I'm at work costs me about $1.50 and gives me meals for a week, so has anyone found a faster way to cook dry beans without a pressure cooker?

My buddy in Tucson does the same thing with pinto beans. The slow cooker method is solid, but if you're in a pinch, just boil them hard for a couple minutes, then shut off the heat and let them sit covered for an hour. It's a quick soak that cuts the time way down. You still have to cook them after, but it's faster than waiting all night.

My cousin tried that quick soak trick last winter when the power went out. She ended up with a pot of beans that were still crunchy in the middle after two hours of simmering on the camp stove. Turns out her "couple minutes" of boiling was more like thirty seconds.
