Best week I ever had was a whole lamb breakdown for a wedding

Last spring I got a call from a couple wanting a whole lamb for their reception. 80 guests, they needed chops, shoulders for roasting, and legs for braising. I spent three days prepping and broke it down in about 4 hours on a Thursday. The meat turned out perfect and they even sent me a thank you card with a photo of the buffet. Has anyone else done a whole animal order like that for a special event? How do you price it out so you don't lose money on the trim?

Closest I came was a guy who wanted me to break down a whole pig for a luau theme party. I told him straight up the trim would cost him extra since I had to grind most of it for sausage to make it work. He grumbled but paid it, and the photos he sent back looked like a proper spread.
