Debate: hand deboning vs using a bandsaw for pork shoulders
So I spent 4 hours last night hand deboning a case of pork shoulders at my shop in St. Louis, and it felt like forever. My coworker swears a bandsaw does it in 20 minutes but you lose more meat and get bone dust everywhere. I feel like hand cutting gives you cleaner product but man the time difference is brutal. What's your take, is the speed worth the waste?

Swapped to a bandsaw last year and now I spend more time picking bone fragments out of my ground pork than I ever did deboning by hand.

kai564 nailed it honestly. I did the bandsaw thing for about a month and swore I was saving time until I found a chunk of bone in someone's pulled pork sandwich. Hand deboning takes forever but I sleep better knowing I'm not sending people to the dentist.
