My old sous told me to quit timing my steaks by feel, and I finally get why
I ran into him at a supply store in Austin last week and he asked how my grill station was doing. When I said I still poke steaks with my finger, he laughed and said he keeps a $12 probe thermometer in his apron because a 1 minute difference on a 1 inch ribeye is the whole ticket. Now I'm wondering what else I do on autopilot that a cheap tool could fix.
That finger poke thing works right up until your hands are cold or you've been grabbing hot pans all night. I cooked at a place where we did 400 covers on a Friday and by hour six my fingers couldn't tell a rare from a well done to save my life. Bought a $15 Thermapen knockoff after that and never looked back. Same deal with resting times, guys pull a steak and send it too fast because they're guessing. A cheap timer clipped to your apron fixes stuff you didn't even know was broken. The old heads act like tools make you soft but they're the same guys sending back steaks.
