Watched a line cook save a burnt pan at a diner in Pittsburgh with a pinch of salt

Dude had a bechamel splitting and scorched on the flat top, he threw in a handful of kosher salt and stirred it straight, saved the whole batch. Anyone else got a stupid simple trick that bails you out when everything is going sideways mid-service?
