A guy in line at a Portland roaster said my pour-over method was 'just making hot bean water'

He was waiting behind me and pointed at my gooseneck kettle, saying I was overcomplicating a simple drink. It happened last Tuesday at Heart Coffee on Burnside. How do you deal with people who don't get the process?
