Thought all bitter coffee was awful until a brewing demo changed my mind
I used to dump out any cup that tasted even slightly bitter. Then I went to a local cafe where they showed how water heat affects flavor. We tasted the same beans brewed at low and high temps, and the low one was so much smoother. Now I always check my kettle before pouring. It's like a little trick that makes my morning way nicer. I even keep a thermometer handy just for coffee.

But isn't that just making a simple thing way too fussy? I mean, it's coffee. You boil water, you pour it over grounds. Having a thermometer on hand for your daily cup sounds like a hassle. I get that taste matters, but at some point you're just chasing tiny details most people won't even notice. Seems like it turns a calm morning ritual into a science project.

Try comparing coffee made with boiling water to water at the right temp. You can actually taste the bitterness from burned grounds versus the smoother flavor. It only takes a few extra seconds and makes your morning cup way better.
