Subcontractor ghosted us mid-pour, left a 40 yard mess in Phoenix

Friday at 6 am, the concrete truck shows up for a slab pour on a 12 unit complex and the finisher never rolls in. We scrambled, grabbed a crew from another job, but by the time they hit the site the mud was already stiffening in the sun. Has anyone else had a sub bail on a scheduled pour, and how do you protect yourself for the next one?
