Thought I could skip the recipe for chili, learned the hard way

I threw together chili without looking at any instructions, just going by feel. It turned out way too watery and bland, nothing like I wanted. Now I use a recipe, it helps a lot. Ever try to cook from memory and fail miserably?

Ugh, been there. Thought I could eyeball soup once... ended up with salty water. Recipes exist for a reason, man.

Does putting a potato in really help with too much salt? Honestly, I've heard it works but always chickened out.
