Dropped $80 on a fancy pH meter and it's the only reason my hot sauce didn't spoil

My pepper mash was sitting at a risky 4.3 pH for days, but the cheap strips said it was fine. The digital readout let me catch it and adjust with a bit more vinegar before jarring. Anyone else have a tool that saved a whole batch from disaster?

Totally, my old hydrometer was off by like 10 points and almost ruined a whole brew. A good digital thermometer was a game changer for me too.

Yeah, that's the worst feeling, watching a batch go sideways over a bad reading. Good on you for catching it, @the_gray. I've learned the hard way to check my gear against known values before trusting it with a new recipe. A digital thermometer really does make everything less of a guess.

Ugh, that hydrometer story hits home. I had a cheap one that was all over the place, gave me a reading that made me think my fermentation was stuck. I panicked and almost dumped in more yeast, which would've been a mess. Now I test it in plain water every time. A reliable thermometer saved my mash temps too, no more wondering if it's actually where it needs to be.
