I finally saw how sauerkraut helps my joint pain
I started eating a spoonful of homemade sauerkraut with lunch every day. After a few weeks, my knee aches from old injuries felt less sharp. I think the good bacteria reduce inflammation. Now I always keep a jar fermenting in my fridge.

That's a long ferment time, @patricia42, and I've found shorter periods work just as well for reducing inflammation. In my tests, the benefits peak around 30 days without extra gain from going longer. Maybe it depends on the specific batch or personal gut response.
