This happens a lot, kids imitating how we keep track of things but making it their own. Last week, my friend's daughter turned a shopping list into a colorful map of the grocery store. They're just trying to join in on what they see as important adult behavior. For the journal, I'd say let them keep the one they started but buy a separate one for yourself. It teaches them responsibility without squashing their interest.
