I argued with my sous about sous vide carrots for a year, but the batch we did at 185F for 45 minutes with a honey glaze changed my whole view on texture.

I finally saw the before-and-after difference when we served them alongside a pork loin last Friday, and the perfect firm-yet-creamy bite convinced me after 12 months of thinking it was a pointless extra step.

Got called out for my hand signals on a site in Tacoma last Tuesday

The rigger said my 'lower slowly' looked too much like my 'stop' signal, and he almost halted a critical pick. He was right, my wrist was too stiff. I've been practicing in the mirror for ten minutes each morning, focusing on clear, big motions. How do you guys make sure your signals are perfect when the sun is in your eyes?
