Debate: Should we patch drywall in stages or all at once on big holes?

I tried to fix a 2-foot hole in my garage wall last Saturday and thought I could mud it all in one go, but it cracked after drying. My neighbor says layering thin coats over four days is the ONLY way, but that feels like a waste of time. What's the real trick here, do you guys stage it or just send it with hot mud?

My buddy tried to send it all at once and ended up with a crack that looked like a map of the Mississippi River.

Hot mud shrinks like crazy if you lay it on thick, that's probably what bit you. Did you at least use mesh tape over the joint or just go straight mud over the gap? I've seen guys try to cheat it with paper tape and it always bubbles out on them. Four days sounds ridiculous for a garage wall though, just hit it with two or three coats over two days with a fan on it.
