I found soaking them in lemon water like @knight.dakota said is key for that perfect crunch.

Did you soak your apple slices in lemon water first? My friend Sarah tried making them last week and they came out kinda chewy. Turns out she didn't slice them thin enough and skipped the lemon juice. Her second batch was way better after she used a mandoline and a quick soak. The crunch was legit, like store-bought but less sweet.

Totally burnt my first batch of apple chips trying to skip the soak like your friend Sarah, @knight.dakota lol. Now I just accept the extra five minutes unless I want weird brown leather.
