First time I watched my grandma make biscuits she pinched the dough and said that's it, no rolling, and I had been flattening mine with a rolling pin for 12 years
I mean, I had a whole biscuit recipe I was proud of before that, but watching her hands do it in about 20 seconds made me realize I was basically making flat crackers this whole time, so idk, has anyone else had an older baker casually crush their technique with one move like that?
Watching that happen is both amazing and a little sad at the same time. My mom did the same thing to me with pie crust, I was cutting in butter with a pastry blender for years and she just tossed it together with her fingers in like 30 seconds. That crust was flakier than anything I ever made. It stings a bit knowing all that time I spent being careful was kind of wasted. But honestly it makes you a better baker once you see it done right in front of you.
