Hot take: I was wrong about sifting flour, a 70 year old baker at the farmers market set me straight
I always skipped sifting because I thought it was a waste of time and my cakes came out dense. Then Marge, who has been baking at the Des Moines market for 30 years, watched me dump flour straight in and said "you're just packing it down, hon" and handed me her old sifter. One pass before folding and my crumb went from hockey puck to actually light, so now I want to know what other "useless" steps I've been skipping.
