My chiffon cake fell flat mid-bake during a wedding order last Saturday
I was at a friend's kitchen in Portland trying to whip up 3 layers for a small wedding cake, and the middle one just sank in the oven. Turned out I didn't fold the egg whites gently enough after a phone call distracted me. Anyone else have a recipe fail at the worst possible time?

I remember reading on a baking blog that even pro bakers mess up chiffon cakes when they get distracted mid recipe. The lady who wrote it said she ruined three wedding cakes before she got the hang of it. Sounds like that phone call was your kryptonite, but at least you saved the other two layers.

Oh man, that sounds rough. I once tried to make a sponge cake for my niece's birthday and accidentally added baking soda instead of powder. The whole thing puffed up like a balloon then collapsed into a sad little pancake right as the candles were being lit. My sister still brings it up every year. At least yours was just one layer and not the whole cake, right?
