My grandma told me to weigh flour instead of scooping it, and I ignored her for 2 years
She never even baked much, just made biscuits every Sunday morning for like 40 years. When I got into baking bread at home she handed me her old kitchen scale, one of those mechanical ones with the round dial, and said 'stop scooping, you're getting a different amount every time.'
I smiled and put the scale in a drawer. Kept scooping for 2 years. My loaves were all over the place, sometimes dense, sometimes gummy. I kept trying different flours and different recipes thinking that was the problem.
Finally dug out her scale for a sourdough recipe that listed grams. First loaf came out with a way better crumb than anything I'd made before. I did the math on my old scooping method and I was sometimes adding up to 30% more flour than the recipe wanted.
2 years of mediocre bread because I didn't want to hear it from someone who 'only makes biscuits.'
So now I'm curious, does anyone here still scoop by habit, or did you all switch over eventually? And what finally made you switch if it took a while?
