Spent 2 years overkneading my sourdough before a timer trick fixed it
I was doing 15 minute stretch and folds every half hour for 4 hours until a bakery owner in Portland told me to just do 3 sets spaced out, has anyone else been overworking their dough for way too long?

Skip the whole stretch and fold thing and just chuck it in a loaf pan after the first rise. You'll get a perfectly good sandwich bread without turning your kitchen into a gym.
