The baker who told me to toss my starter after 2 weeks changed my mind
At a baking class in Portland last fall, an older baker told me I was wasting my time keeping a starter that was only 14 days old. She said toss it and start fresh, but I kept feeding it anyway and now 8 months later it makes the best sourdough I've ever had. Has anyone else stuck with a young starter against advice and had it work out?

Whoa, wait. She actually told you to toss a 14 day old starter? That's crazy to me. A lot of people swear the first couple weeks are just the ugly phase.

Yeah @henderson.mason I feel that, my grandma kept a jar of starter alive for like 30 years and it smelled like feet half the time lol.
