Walked into a bakery in Austin and nobody was weighing ingredients

I stopped by this little shop on South Congress and watched the baker just eyeball everything, flour flying everywhere. She dumped sugar straight from the bag into a mixer without a single scale. Am I crazy for thinking weighing is non-negotiable or is that old school snobbery?

Weighting is pretty standard for getting consistent results, but plenty of bakers who've done it long enough can just go by feel. That little shop might have some leeway on accuracy since they're probably baking small batches for regulars.

Hell yeah @ryan952 you get it! I walked into this place in Portland last summer and the guy was tossing handfuls of flour like he was feeding chickens. I was ready to walk out but I stayed and the bread was honestly killer. Weighing is definitely the right way to go for consistency but some of these old school folks have been doing it so long they just know. My cookies would come out like frisbees if I tried that though, I'd need a scale and a spreadsheet to even get close.
