My sourdough went from dense bricks to airy loaves after 3 months of daily feeding

I kept getting hockey pucks until I started discarding less and feeding at the same time every morning, now the crumb is actually open. Has anyone else nailed their loaf after adjusting their discard ratio?

Hold on wait THREE MONTHS of daily feeding? That is some serious dedication right there. I was ready to give up after like two weeks of that sticky mess and my kitchen smelling like a brewery. But discarding less is actually a game changer, I started keeping more of my starter in the jar and only tossing maybe a quarter cup and suddenly my bread had bubbles everywhere. The feeding time thing is huge too, I swear my sourdough knows when I hit snooze and gets all grumpy and flat. It's wild how such tiny changes can turn a frisbee into actual bread you can toast without breaking a tooth.

Had a buddy who was about to toss his starter in the compost after months of sad flat loaves (he was convinced his kitchen was cursed or something). He switched to feeding right before bed instead of whenever he remembered and boom, the next loaf actually had those little ears on top. Still cracks me up how dramatic sourdough can be.
