Warning: My attempt at a birthday cake for my nephew in Denver turned into a total disaster zone.
I tried a new buttercream recipe from a blog and the whole thing melted into a puddle on the counter before I could even put the second layer on. Has anyone else had a frosting just completely give up on them like that?

Oh that brings back some messy memories. I always swore by shortening in frosting for hot weather, thought butter was just asking for trouble. Then my daughter asked for a real buttercream for her wedding cake last summer, and I was so nervous. We did a test batch with high quality butter and chilled the layers like crazy, and it held up perfectly even outside. Sometimes the recipe source really matters, those blog recipes can be hit or miss.

Yeah, that's so true about the recipe source. Like @nancy_garcia63 said, a good buttercream with real butter can work, but you have to start with a solid recipe. Some of those blog posts are just someone trying to get clicks, and they never tested it in a real kitchen. I tried one last year that called for twice the milk it needed, and it was soup. Now I only trust a couple of bakeries that share their pro recipes, the ones they actually use for orders. It makes all the difference.
