I hit 100 briskets smoked and most of them were way overrated

Last weekend I pulled my 100th brisket off the smoker. It was a 14 pound prime from Costco in Austin. Everyone online acts like brisket is the holy grail of BBQ, but honestly I think pulled pork is way more forgiving and tastes just as good if not better. Am I the only one who thinks brisket gets too much credit for being hard when it's really just expensive and finicky?

Oh man, you are absolutely not alone in this. Pulled pork is way more forgiving and honestly tastes incredible without all the stress. Brisket gets this weird mythical status (probably because of the price tag and the pressure to nail it) but I've had some pretty average briskets from places people rave about. Meanwhile, a simple pork shoulder with a good rub and some patience always comes out tender and juicy. The whole "brisket is the ultimate test" thing feels more like a gatekeeping move than actual truth. Give me a well done pulled pork sandwich any day over a dry, overpriced brisket slice.
