I put a whole pineapple on my smoker for 4 hours and it turned into candy
I was messing around with my offset last weekend and got the idea to smoke a whole, peeled pineapple. I kept the temp around 225 degrees, right next to a pork butt. After about 4 hours, the outside was dark and sticky. I pulled it off, let it cool, and sliced it. The texture was completely different, like a firm, smoky fruit leather. The heat had broken down all the fibers and caramelized the sugars. It was so good chopped up on top of some vanilla ice cream. I learned that low heat for a long time can change fruit in a way I never expected. Has anyone else tried smoking a fruit for that long and gotten a similar result?

That sounds amazing, I've only ever smoked pineapple for an hour or so as a side. Letting it go that long until it breaks down into candy is a game changer. I need to try that next time I have the smoker going for a long cook.

Three hours just for pineapple seems like a lot of work for a side dish.

Yeah @zarapalmer, that's more like a 3-4 hour smoke for candy pineapple.
