Spent 3 hours trimming a brisket before I realized I was taking off the wrong fat cap

I kept watching these competition videos where they shave it down to almost nothing. Forgot I was cooking for a family of 6 who like their meat juicy, not dry. Anyone else overthink a trim and ruin a good packer?
