The old grease pencil trick my first manager taught me in 2005

We used to label every expo ticket with a grease pencil mark so the cooks could see at a glance which order was running late, and it kept that whole line calm through a 200-cover Friday rush... Has anyone else got a weird old habit that still works better than the fancy digital system?
