Finished my first solo chimney rebuild in Austin last week and almost had a disaster
Tbh, my mortar mix was way too wet and the whole stack started to lean after about 20 courses. I had to strip it back to the base and redo the whole thing with a stiffer mix, which added a full day to the job. Anyone else had a mix consistency issue totally throw off a project?

Tell me about it, I once mixed a batch so soupy it basically became decorative grout. Had to chisel out an entire patio corner before it fully set, which was a special kind of weekend fun. You definitely learn the hard way that stiffer is better for anything that needs to stand up straight.

Saw a video where soupy mortar washed out in a rainstorm.

Made that mistake myself once. Mortar looked fine going in then turned into soup when the rain hit. Had to rip out a whole garden wall and start over, which taught me to check the weather report before mixing anything.
