Broke my favorite boning knife on a pork shoulder yesterday

Was trimming a case of shoulders for sausage and my old 6-inch flex boning knife snapped right at the handle. Had to finish the last 20 pounds with my chef's knife which was a total pain. Anyone got a brand of boning knife that actually holds up to heavy use?

Man that exact same thing happened to me last month with my old Dexter, just snapped clean off while I was breaking down a brisket. I ended up getting a Mercer and it's been solid so far, no flex issues even on some tough bone-in work.

Funny you mention Mercer, that's the exact same brand I switched to after my Victorinox went soft on me. The steel on those things holds an edge way longer than I expected, been using mine daily for about 4 months now and it's still razor sharp. Dexter always felt a bit hit or miss with their heat treatment, some knives are solid but others just seem to snap at the worst possible moment.
