Had to choose between a local steer and a cheaper feedlot buy for my custom orders

A regular wanted a full beef cut for his family reunion, and I could either pay $4.50 a pound for a local grass-fed Angus or get a feedlot steer for $3.20. I went with the local one, thinking the quality would be worth it, but the customer complained the flavor was 'too strong' and I'm stuck with extra primal cuts. Anyone else run into customers who say they want quality but then balk at the real taste?

Always do a sample taste test first.

Is it that big of a deal though. Most stuff is fine. Feels like making a simple thing too hard. Just open it and eat it.

Yeah but @murray.gray, I saw a report last year about how often this stuff actually goes wrong. It's not just about taste, it's a real safety step. They found a small percentage of sealed goods can have serious issues you can't see. Doing a quick check takes two seconds and can save you a real bad time. It feels like extra work but it's one of those things you don't think about until you get a bad batch. Better safe than sorry.
