Switched from breaking down whole primals with a cleaver to a 10 inch breaking knife and my yield went up 8 percent
Did the math on 40 lbs of chuck last Tuesday at my shop here in Reno and the cleaner cuts meant almost 3 extra lbs of saleable meat. Any of you still using a heavy cleaver for primary breakdown, or did you switch over too?
