Appreciation post: that tiny butcher shop in Portland with the 30 day dry aged beef

I was visiting my sister in Portland last month and she dragged me to this little hole in the wall butcher shop called Gartner's. I wasn't expecting much honestly. But the guy behind the counter started talking about their dry aging process and showed me a ribeye that had been hanging for 30 days. I bought one steak to try at home. Cooked it in my cast iron with just salt and pepper. I swear it was the most flavorful piece of beef I've ever eaten. The crust came out perfect and the inside was like butter. Has anyone else found a hidden gem butcher shop that changed how you think about meat?

Practical tip: call them ahead and ask for a spot, it works like half the time.
