My stew simmered for eight hours and it was totally worth it!

Eight hours of simmering means your stew likely reduced down to a thick, concentrated paste. Carrots probably lost all structural integrity and turned into sweet orange threads. Meat that falls apart at a glance is the goal, but at that point, it's more of a meat sauce. The real commitment is needing to stay home all day, which rules out any spontaneous plans. On the plus side, your kitchen must have smelled amazing for a solid eight hours.

Doubt it needs to be that serious... eight hours is way too long for stew. You can get fall apart meat in maybe three or four hours. The commitment sounds more like a prison sentence than cooking. Plus, that reduced paste might just be burnt if you're not careful.
