Cold brew always tasted like dirty socks to me until a barista at Blue Bottle in Austin made me try a 16-hour steep instead of 24.
She said the shorter time keeps the bright notes without getting that bitter mud flavor, so I gave it a shot and now I can't go back to my old method.

16 hours vs 24, that's a pretty big difference. Did she say anything about the grind size for that shorter steep? I've always done a coarse grind for 24 hours but if I'm switching to 16 I wonder if I gotta go even coarser to keep it from getting too strong before that bitter mud sets in. Would love to know what ratio she used too, because my usual 1:8 might be too concentrated for 16 hours.

People get way too worked up over coffee steep times like it's rocket science or something. 16 hours versus 24 hours is just a preference thing, not some life or death decision. If the coffee tastes good to you then you're fine, you don't need to overthink every single variable. Probably just try it with your normal coarse grind and see how it goes before you start changing everything around. Half the time these little tweaks make barely any difference anyway.
