My grinder was set way too coarse and the burr swap at 2 weeks is what tipped me off
I was proud of my pour over routine for almost a year, then last month I swapped in a new burr set and every cup suddenly tasted sharp and hollow. A barista at the shop on 5th asked me what setting I used and said "that's a French press grind, friend." Turns out I'd been choking my own brews the entire time and blaming the beans. I went back and ground at 18 clicks instead of 26, and the same bag of Kenya tasted like it actually had fruit in it. So what's your go-to way to check grind size without dumping a whole bag?

Read a trick once: rub a pinch between fingers, feels like salt means drip grind.
