Rant: my gooseneck kettle died mid pour and I'm done babying kettles
Dropped $90 on a variable temp gooseneck 14 months ago and the thermostat crapped out last Tuesday right as I was pouring for a V60, so I finished with a saucepan and honestly the cup was fine. Everyone says you need the temp control, but I'm starting to think a $25 stovetop kettle and a thermometer gets you 90% there. Anyone gone back to a plain kettle and regretted it?
The cup was fine" is a trap, because fine is exactly what you settle for without temp control. My kettle holds within a degree, and that lets me change one thing at a time and actually taste the difference instead of guessing what went wrong between the beans and the water. A saucepan cup being drinkable is a pretty low bar for a hobby you clearly care about.
