The salted water trick for espresso shots, is it cheating or genius?
My shots were always sour at my kitchen setup in Portland, then I tried adding a tiny pinch of salt to the grounds before pulling, and the bitterness just vanished, so does this count as a real fix or am I just hiding bad beans?
Tell me what beans and roast you're pulling. If you're using something super light roasted and getting sour shots, that salt trick might just be papering over a bigger issue with your grind size or water temp. I've messed with it here and there, and honestly, it only helped when the beans were already borderline. Are you dialing in your other variables first, or is the salt doing all the heavy lifting?
